How to Make and Preserve Mock Pineapple

Hello, my friends! I come to you today with another incredible way to preserve your abundance of zucchini. We discussed how to preserve and use zucchini flour. Now I bring to you the tangy, juicy delicious flavor of pineapple – mock pineapple!

That’s right, pineapple. Do you wish you could add this delicious tropical delicacy to your homemade pantry, but find the real fruit to be too expensive an investment? Maybe it’s not easy to find in your area. Look no further! I’ve found you the perfect substitute AND another use for those over-producing zucchini plants!

In all seriousness, this is an inventive use for extra large zucchini and it is super simple and delicious. With just a few basic ingredients, you can add this new staple to your pantry. Follow the recipe card below and watch the video on my social media pages for more details.

What to do with Mock Pineapple

Once you’ve made your mock pineapple, what can you do with it?! Great question! These are an excellent snack right out of the jar. Add them to marinades (we combined them with our Cowboy Candy for sweet and spicy marinade), fruit salads, breads, cakes, or anything you would add pineapple to. Because zucchini has a very neutral flavor, it takes on the flavor of pineapple but has a stronger texture than real pineapples.

Remember, It’s important to be creative with how you use your home-preserved foods. Whether you are growing. food in the garden, or getting produce from the farmer’s market, most of the time, home-preserved foods are different than the ones you can just buy at the grocery store.

You would be hard-pressed to find pineapple zucchini or zucchini apples on the shelf at the supermarket. But, your home-preserved foods are going to be fresher and most of the time, much cheaper than store-bought foods. Plus you get the benefits of working in the garden, supporting a local farmer, working with your hands, and connecting with where your food comes from.

Mock Pineapple (Pineapple Zucchini)

Ingredients

  • 12 cups Zucchini (peeled, seeded, chopped)

  • 1 1/4 cups Lemon Juice

  • 4 1/3 cups Pineapple Juice

  • 2 cups Sugar

Directions

  • Peel, seed, and chop zucchini into equal pieces.
  • Combine all ingredients in a large pot.
  • Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Wash and sterilize your jars.
  • Remove from heat and fill prepared jars, leaving 1/2 inch headspace.
  • Wipe the rims of jars with vinegar. (This is important because any sugar residue may prevent proper sealing.)
  • Apply lids and rings to jars.
  • Process in a water bath canner for 15 minutes. (Check the altitude chart included in this post for time adjustments. This processing time is for sea level.)
  • Remove jars from the canner and allow the jars to sit for 24 hours before removing the rings.

Notes

  • It’s important to remember to remove the rings and test your jars to make sure they are properly sealed. you can do this by lifting the jar by the lid after you have removed the ring. If the lid stays on, you have a good seal.
  • *Do not store your jars with the rings on them. This may give you a false seal and the food would not be safe to consume.
  • These mock pineapples are a quick and easy canning project. I love my water bath canner, similar to this one.
