How to make Elderberry Syrup (and Gummies!)

100 g Dried elderberries
20 g Astralagus root
15 g Ginger (or powder)
8 g Whole Cloves (or powder)
1 qt distilled water
1 c raw honey
1/2 c sugar (optional)
- For Gummies
3/4 c elderberry syrup (or 1 c if you aren’t adding extra juice.)
1/4 c juice such as apple or grape for added sweetness (optional)
1/4 c powdered beef gelatin
1/2 c hot (not boiling) water
Directions
- To Make Syrup
- Combine water, elderberries, astragalus root, ginger, and cloves in a pot and bring to a boil.
- Let it simmer until reduced by about half. (20-30 minutes)
- Separate solids from the liquid using a mesh strainer. (Compost solids.)
- If you want to make a thicker syrup, return liquid to the pot and add sugar. Bring back to a boil for at least 10 minutes.
- Once the syrup is cooled, add in honey to preserve medicinal benefits.
- Store your syrup in a glass jar with a lid. Store in refrigerator for best shelf life.
- To Make Gummies
- Combine cooled syrup (and juice) and beef gelatin in a bowl.
- Add hot water and stir.
- Pipe into molds or spread 1/2 inch thick onto a lined baking sheet and put in the fridge for an hour or 2.
- Once solidified, remove from molds (or slice into cubes) and store in a sealed container in the fridge for several weeks.
Notes
- Dosage is 1 TBSP for adults, 1 tsp for children under 12 to boost immune system.
